Raspberry Chicken 
My kids love this recipe.  You can reduce the calories by using a different mayo, but not all of the marinade remains on the chicken and the fat from the mayo helps tenderize and flavor the chicken.


4        3 ounce chicken breast
      Raspberry Marinade (recipe below)

Marinade:

½ cup of Mayonnaise (I do not use reduced calorie)
¼ cup of Raspberry salad dressing (I use Paul Newman’s Light Raspberry & Walnut)
2 Tablespoon Raspberry preserves (I use seedless)
Salt & Pepper to taste

Mix all marinade ingredients together and add to a ziplock bag with 4 chicken breast.  Marinate overnight or at least 1 hour before cooking.

Grill chicken on an outside grill or inside.  I use a George Foreman grill.  This allows for not adding extra oil to the recipe.  Grill until chicken is cooked through about 4 minutes on each side.  This will depend on how thick your chicken breast is, I like to pound them thin. Chicken will have a nice crispy glaze from the marinade.

Approximately 7.5 Weight Watcher Points

Recommended sides:  Asparagus steamed then drizzled with lemon and olive oil, Spinach sautéed in olive oil and garlic, mixed green salad. 


Blueberry Yogurt Smoothie
I have this smootie almost every day for breakfast.  It is tasty, filling, and satisfying.

1/2 cup frozen blueberries (make sure sugar isn't added)
1/2 cup non-fat white milk
1 cup vanilla yogurt (I use Wegman's all natural)

Add all ingredients to a blender and puree until smooth.  The frozen blueberries keep this drink thick and cold.  Weight Watcher points* 6.  I use vanilla yogurt instead of low fat because the flavor is better.

Variations:  Bananas, strawberries, raspberries, mango - the sky is the limit.
